Carrot tops


I am totally obsessed with my vegetable garden and all of its beautiful treasures as they unfold. As the season progresses I have savored the baby lettuces, enjoyed beet after beet, eaten and juiced kale and brokali for months. Such fun, and I feel healthier than ever. I’ve even prodded my husband into juicing, not exactly with a smile on his face, but down the hatch anyway.

Now, months ago I mentioned that many leaves were actually poisonous, while stems were fine-just like rhubarb(by the way I juice the stems). Carrot tops never seem to be talked about, and I can’t believe they are thrown out. They are so lacy and pretty, particularly if you are pulling baby carrots. I was just tossing mine into the compost pile, and genuinely feeling a bit wasteful until I did a little exploring. Now, the baby carrots are lightly steamed, while the carrot tops are juiced, or added to salads. Actually the tops are more nutritious than the carrot itself.

I love grabbing nutrition from every direction, and not wasting-hope you will join this thought process.
